Food for thought

I will be sharing an easy recipe of what I had for lunch which was basically fried plantains and scrambled eggs.

 Ingredients:
Vegetable oil ( I used olive oil)
2 ripe plantains
Salt
For the scrambled eggs
4 eggs
Fresh tomatoes
1 onion
Pepper
Basil
Thyme
Knorr cubes


Directions:
First I heated oil in a saucepan to a certain temperature. Then I peeled the plantains and discarded the skins. Sliced as indicated in the photo and sprinkled salt. Fried plantains in oil, turning occasionally until it had a golden color on either side. Finally I removed with a fork and let the oil drain out.

Happy New Year

I'm so excited to be taking up photography once again after going on a hiatus. My resolutions for 2015 are to visit as many places as possible, take as many pictures (at least one a day), and blog frequently. I hope I can achieve this goal.
